THE PRODUCTION PROCESS
From grapes vinified in white, hand-picked and processed with a soft pressing. The wine is made with the primary fermentation in stainless steel tanks at controlled temperature. The sparkling wine is produced according to the Italian method on autoclave (Charmat method). lasting about 60 days. It is then filtered and bottled. The result is a sparkling wine as an aperitif par excellence very versatile. The sparkling wine goes very well with risottos, soups and white meats. It enhances the fish, especially shellfish, seafood, shellfish and vegetables (chicory and mushrooms). Serve at 6 ° – 8 ° C.
